I was told she would likely go back to green on her first couple of good soakings and then turn back to this pretty pink color in between long watering periods with full sun

These are not quite as bright as our Orange Monroe hybrids, but I suspect this what they're crossed with and a heavy percentage at that. These are perfectly perfect bright pink Potosina, just three available at the moment. Each measuring in at about 2. 5 3" across, stem only on these, but these are pretty hardy little guys.
