Fausto owns the 6 hectare farm Finca Carolina in Pichincha Ecuador, where he has 3 hectares planted in coffee. This offering is his Sidra varietal, which performs exceptionally well in this region of Ecuador. Although the origins of Sidra are disputed, the cup characteristics are widely known floral and fruity notes, with a high level of sweetness.
